Red wheat vs White wheat
 
Which do you guys prefer? Until today I had only used hard white wheat from honeyville grain and Walton feed ("golden 86"). The golden 86 is a little better then honeyvilles white wheat. Its a little sweeter and has more flavor so I just went ahead and ordered a whole bunch assuming it would be my favorite wheat (I grew up on white bread). Well I just made my first loaf with hard red spring wheat from honeyville and this stuff is really tastey IMO. It didn't come out dense or bitter like some people have said it does (I used 100% whole wheat expcept for a couple tablespoons of white flour that was in the sourdough starter. Also added 1/2 tsp of regular yeast.). It doesn't have the sweetness that the golden 86 has, but its got more flavor. I guess from everything I read I was expecting a dense loaf like a brick that tasted like hay. Instead I think it makes a more tastey bread.

Does anyone here prefer the hard red wheat over hard white wheat?

Not I. The Golden86 dough rises higher and has a less-dense texture. It is way more forgiving of this ham-handed baker. And, it by no means makes a loaf of white bread -- it is still whole wheat bread. Golden86 is my favorite.
